Grinchy Green Mint Truffles Recipe

Ingredients

  • 8 oz cream cheese softened
  • 1 package 15.25 oz mint-flavored sandwich cookies (like Mint Oreos), finely crushed
  • 1/2 tsp peppermint extract optional for extra minty flavor
  • 2 cups white chocolate chips or white candy melts
  • Green gel food coloring
  • Red heart sprinkles to mimic the Grinch's growing heart
  • Crushed candy canes or green sugar sprinkles optional for decoration

Instructions

Prepare the Truffle Filling

  • Crush the mint sandwich cookies into fine crumbs using a food processor or by placing them in a resealable bag and crushing them with a rolling pin.
  • In a bowl, mix the crushed cookies with softened cream cheese until a smooth, dough-like consistency forms.
  • Add peppermint extract if desired for an extra minty flavor.

Shape the Truffles

  • Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Freeze the truffle balls for 30 minutes to make them firm and easier to coat.

Coat with Green Chocolate

  • Melt the white chocolate chips or candy melts in a microwave-safe bowl in 30-second increments, stirring until smooth.
  • Add green gel food coloring to the melted chocolate until you achieve the desired Grinchy green shade.
  • Using a fork or a skewer, dip each truffle into the melted green chocolate, ensuring it is fully coated. Place the coated truffles back on the parchment paper.

Decorate the Truffles

  • While the coating is still wet, place a red heart sprinkle on each truffle.
  • Optionally, sprinkle crushed candy canes or green sugar sprinkles for extra flair.

Set and Serve

  • Allow the truffles to set at room temperature or refrigerate until firm.
  • Store in an airtight container in the fridge for up to one week.
