Ingredients

  • 6 large eggs boiled and shelled
  • 6 tablespoons plain Greek yogurt or mayo if you’re feeling traditional
  • 4 teaspoons curry powder or cayenne pepper for extra heat
  • 1/2 teaspoon salt
  • Red bell pepper slices for the devilish decorations
  • Thin lemon grass cut into tiny pieces for eyes and other details

Instructions

STEP 1: BOIL AND COOL THE EGGS

  • Start by boiling your eggs until they’re hard-boiled (around 10 minutes). Once done, cool them in an ice bath—this makes peeling them a breeze, even for little kitchen helpers!

STEP 2: PREP THE FILLING

  • Slice the eggs in half lengthwise and carefully remove the yolks. Mash the yolks in a small bowl with the Greek yogurt, curry powder, and salt. Mix until smooth. For a more vibrant yellow color, feel free to add a pinch of turmeric—it’s spooky season, after all!

STEP 3: FILL AND DECORATE

  • Spoon the yolk mixture back into the egg whites or use a pastry bag with a large round tip for a fancy touch.
